Kimchi’s popularity has soared in recent years. This is due in part to its international reputation as one of the top five health foods, as designated by the research journal ‘Health’. Kimchi is uniquely Korean and has been recognized as an intangible Cultural Heritage by UNESCO. It was selected to preserve the socio-cultural value distinct in Korean food culture. The main ingredients are linked to anti-aging properties and the strengthening of the immune system. Napa cabbage, radish, chilli, onion, scallion, garlic and ginger contain large amounts of antioxidants such as Vitamin A and C. Lactic acid and ‘good’ bacteria produced by the fermentation process assist the growth of useful microorganisms in the gut. This has been linked to cancer prevention and boosting immunity. Science and health benefits aside, this traditional Kimchi is bursting with tangy traditional flavours made to a family recipe, passed down from generation to generation.
